Culinary changes hit The Venetian, Palazzo

The Venetian and The Palazzo have lost two of their big-name chefs.

Charlie Trotter has closed his two adjoining Palazzo restaurants, Restaurant Charlie and Bar Charlie. In the meantime, David Burke’s company has ended its partnership with E-Brands, the majority partner in The Venetian’s David Burke Modern American Cuisine.

E-Brands will continue to operate the space that, for the time being, still bears Burke’s name. But they’re expected to change the name and concept soon.

Burke was also the chef behind the menu at the recently closed Hawaiian Tropic Zone at Planet Hollywood. But he still operates his Burke In The Box casual restaurant in McCarran airport, and is reportedly looking into other opportunities in the valley.

Superstar Chicago chef Trotter may not be as optimistic about his future in Las Vegas. This is his second attempt to bring his world-renowned cuisine to town. In 1995 he opened a private restaurant for MGM Grand guests in that resort, long before the fine dining craze hit town. Even after opening to the public, he was still unable to find an audience for his haute cuisine, and eventually shut the doors after less than a year rather than convert it to a more mainstream concept. By 2008, he had apparently decided the town was finally ready for him. But his two critically acclaimed restaurants opened their doors just in time for the economic downturn that has severely impacted fine dining establishments.
